Your last stop is Akama Distillery where there is a dedication to the art of miso and soy sauce making. The natural brewing process at Akama Distillery involves using spring water from an on-site well. This method, considered "old-fashioned" by some, is a testament to their commitment to tradition. For instance, their soy sauce spends two years maturing in 155-year-old cedar barrels, from fermentation to the first pressing. While these methods require painstaking effort, attention to detail, and considerable time, they aim to extract the fullest flavor potential from the microbes involved. Akama Distillery persists with these techniques to further refine the taste of tradition, valuing the unique flavors that only human skill and time can coax from the ingredients. You will have a chance to taste miso soup there and you will find out what make it special.
