Morocco has an active, up-and-coming wine industry -- a best-kept secret that is now making itself known around the world. Today's excursion is ideal for those with an interest in wine, and could very well expand your viticulture vocabulary.
A 75-minute panoramic drive by motorcoach takes you through Casablanca and north to the clean, green and unpolluted Ben Slimane Province. This 11,000-acre viticulture area produces what many sommeliers consider the best wine of Morocco. It is home to the largest and oldest winery in Morocco, Domain Thalvin, which recently won three Silver Medals at the Paris Wine Competition.
Tour the vineyard, the cellars and a small portion of the production area before settling in for a comprehensive tasting of several of Domain Thalvin's best offerings, including the iconic Syrollo. Between tastings, clear your palate with small Moroccan delicacies. A lively discussion explains viticulture of the region and the methodology at Domain Thalvin. The Atlas Mountains protect the valley from desert sands and the Atlantic Ocean offers some humidity. Hot days and cool nights help to create an excellent climate for the vines. Working with excellent fruit, the winery uses several methods to process their varietals, including ageing in concrete, stainless steel and French oak tanks and barrels. Their wines are very 'eco-friendly' as they don't use any herbicides or fungicides.
