Long considered one of the world's tastiest oysters, the Malpeque oyster has been farmed in the cold waters of Prince Edward Island for generations. In the tradition of yesteryear, oyster fishermen and -women set out in their dories and pluck the shellfish from the bottom of local rivers and bays with a set of long wooden tongs.
Today, you will learn all about this industry, beginning with a scenic drive into the Island's picturesque central region. At the Raspberry Point Oyster Company facility, hear about the difference between standard and choice oysters and about merroir -- a term coined from the wine industry that has been morphed into a maritime application.
After your lesson, an expert oyster shucker will be more than happy to open plenty of oysters for you to enjoy -- these may well be the cleanest and freshest oysters you will ever taste. Try your hand at shucking -- it's easier than you've been led to believe!
