Head towards Siurana, where Mas Marcè is located. The owners of this family business, Mas, Natàlia and Manel, started out with the goal of recovering the population of Rosas' native breed of sheep. Learn how they carefully supervise the sheep and promote only natural livestock practices on the farm to ensure that their finished products (wool, milk and cheese) are top quality. The milk and cheese from the farm are highly acclaimed and are served in many local restaurants. The partners are adherents of the 'slow food' philosophy, so you will be able to see their entire process and appreciate exactly how the farm works. Sample the sheep-milk cheese produced on site.
Your next stop will be at Empordalia -- an agrarian cooperative between the towns of Pau, Rosas and Vilajuïga. The region is located in a peculiar, rocky landscape swept by the tramontana wind. This is part of the terroir and lends a special flavor to the local wines and olive oils. Empordalia currently produces extra virgin Pau's oil and Sinols wine. Stop briefly at a centenary olive garden to appreciate the whole process of oil pressing, from picking to crushing at the old mill. Visit the modern cellar to taste a couple of different olive oil varietals.
