Upon arrival in the small village of Scorrano, get acquainted with Azienda Agraria Duca Carlo Guarini -- a farming enterprise run by the descendants of the noble Guarini family. The Guarinis came from Normandy and settled in Salento in the 11th century.
You will visit the incredible atmosphere of the wine cellar, which feels like it belongs entirely in another era, and the underground oil mill, which dates back to the 15th century. It is carved out of rock.
Gather around for a tasting based on three kinds of wine and some food specialties produced by the company. Try various kinds of extra virgin olive oil, vegetables stored in oil (sun-dried tomatoes, artichokes, pitted olives) and vegetable tapenades (peppers, olives, tomatoes, artichokes). Apulian dry bakery products pair beautifully with these.
